Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes.
  3. Cook the ground beef in a large skillet over medium heat until browned, about 5 to 7 minutes.
  4. Sauté the onion and garlic until the onion is translucent, about 3 to 4 minutes.
  5. Combine the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper with the beef mixture and simmer for about 5 minutes.
  6. Stuff each pepper with the beef and rice mixture, packing gently.
  7. Bake covered for 30 minutes, then uncover and bake for an additional 10 to 15 minutes until the peppers are tender.
