  • 4 pieces boneless, skinless chicken breasts
  • 1 cup breadcrumbs Use panko for extra crunch.
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce Ensure it's gluten-free if needed.
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil for garnish (optional)

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  • Coat each chicken breast in the breadcrumb mixture, pressing to adhere.
  • Heat olive oil in a skillet over medium heat. Brown each chicken breast on both sides for about 3-4 minutes.
  • Transfer the chicken to a baking dish. Top each piece with marinara sauce and mozzarella cheese.

Cooking

  • Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through and the cheese is bubbly.
  • Garnish with fresh basil before serving.

Notes

To store leftovers, let the dish cool, place it in an airtight container, and refrigerate for up to 3 days. It can also be frozen for longer storage. Broil the chicken for a minute or two after baking for a crispier topping. Marinade the chicken in Italian dressing for more flavor.
