Ingredients

Casserole Base

  • 12 large Eggs
  • 2 cups Milk, half-and-half, or cream
  • 4 cups Shredded cheese (cheddar, Monterey Jack, etc.)
  • 6 cups Potatoes, hash browns, or bread cubes

Savory Fillings

  • 1 lb Breakfast sausage, bacon, ham, or cooked chicken
  • 1 cup Vegetables (bell peppers, onions, spinach, mushrooms, tomatoes, etc.)

Seasonings and Toppings

  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 cup Fresh herbs for topping (optional)

Optional Sweet Ingredients

  • 1 cup Fruit (for dessert-style casseroles)
  • 1 tablespoon Cinnamon
  • 1 tablespoon Vanilla extract
  • 1/4 cup Maple syrup

Instructions

Preparation

  • Choose and prepare the base, deciding on bread, hash browns, or potatoes. Grease a baking dish generously.
  • Cook the savory fillings by browning the sausage or bacon. Sauté onions, peppers, and other vegetables until tender.
  • Layer the base ingredients in the greased dish, add the savory fillings, and sprinkle with cheese.

Cooking

  • Whisk together the eggs with milk or cream, salt, pepper, and other seasonings. Pour slowly over the layered ingredients.
  • For overnight casseroles, cover and refrigerate. If baking immediately, let it sit briefly to absorb the egg mixture.
  • Bake in a preheated oven until set and lightly browned.

Serving

  • Cool before slicing and serve with toppings like herbs, avocado, salsa, or maple syrup.

Notes

For best results, sauté watery ingredients first. Season each layer to enhance flavor.
