  • 1 head head of cauliflower, cut into florets
  • 2 tablespoons butter or vegan butter Use vegan butter for a vegan version.
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 can (15 oz) coconut milk
  • 2 tablespoons tomato paste
  • 1 tablespoon garam masala
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Cooking

  • In a large skillet, melt the butter over medium heat. Add the onion and sauté until translucent.
  • Stir in the garlic and ginger and cook until fragrant.
  • Add the cauliflower florets, coconut milk, tomato paste, garam masala, and cumin to the skillet.
  • Bring to a simmer, cover, and cook for about 15-20 minutes, or until the cauliflower is tender.
  • Season with salt to taste.
  • Serve hot, garnished with fresh cilantro.

Notes

Make sure not to overcook the cauliflower. For extra depth of flavor, add a splash of lemon juice or chopped tomatoes. For a spicier version, add chili flakes or a chopped chili pepper.
