For the Chicken

  • 500 grams Chicken
  • 2 large Onions (Sliced)
  • 2 tsp Ginger garlic paste
  • 2 tsp Red chilli powder
  • 0.25 tsp Turmeric powder
  • 0.5 tsp Coriander powder
  • to taste Black pepper
  • 0.25 tsp Garam masala powder
  • 2 tbsp Coconut oil
  • Curry leaves
  • Coconut oil (for frying onions)
  • to taste Salt

Instructions
 

Preparation

  • Deep fry the sliced onions in coconut oil until they are golden brown. Be careful not to let them burn.
  • In a bowl, marinate the chicken with all the ingredients listed above.
  • Add the fried onions into the marinated chicken.
  • Cook it on medium flame until the chicken is fully cooked and the gravy has reduced and become dry.

Notes

Ensure that the onions are fried just right for a crunchy texture. Adjust the spices according to your heat preference. You can reduce the red chilli powder if you prefer a milder dish. Use fresh spices for the best flavor.
