  • 500 grams Chicken Boneless or with bones as preferred
  • 2 large Onions (sliced) For frying and garnishing
  • 2 tsp Ginger garlic paste
  • 2 tsp Red chili powder Adjust to taste
  • ¼ tsp Turmeric powder
  • ½ tsp Coriander powder
  • to taste Black pepper
  • ¼ tsp Garam masala powder
  • 2 tbsp Coconut oil For cooking
  • Curry leaves For garnish and flavor
  • for frying Coconut oil For frying onions
  • to taste Salt

Instructions
 

Preparation

  • Deep fry the sliced onions in coconut oil until they are golden brown. Be careful not to let them burn.
  • In a bowl, marinate the chicken with all the ingredients listed above.
  • Add the fried onions into the marinated chicken. Cook it on medium flame until the chicken is fully cooked and the gravy has reduced and become dry.

Serving

  • Serve hot along with steamed rice or roti, garnished with fresh curry leaves.

Notes

Ensure that the onions are fried just right for a crunchy texture. Adjust the spices according to your heat preference. Use fresh spices for the best flavor. You can add vegetables like bell peppers or carrots for additional nutrition. For a creamier texture, add coconut milk.
