  • 1 cup bell peppers (sliced)
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced)
  • 9 oz package tortellini Use frozen tortellini directly without thawing.
  • 2 cups beef broth Homemade beef broth can enhance flavor.
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or provolone) Mozzarella can be used for a different taste.
  • Salt and pepper to taste

Preparation

  • In a slow cooker, combine the beef, bell peppers, onions, mushrooms, and beef broth.

Cooking

  • Cook on low for 6-8 hours or until the beef is tender.
  • Stir in the heavy cream and tortellini during the last 30 minutes of cooking.
  • Once the tortellini is cooked, add the shredded cheese and stir until melted.
  • Season with salt and pepper to taste, and serve warm.

Notes

Serve warm, garnished with extra cheese if desired. Pairs well with garlic bread or a simple salad. For extra nutrition, add vegetables like spinach or zucchini. For spice, consider adding diced jalapeƱos or hot pepper flakes.
