  • 4 pieces chicken thighs or breasts Bone-in or boneless
  • 1 cup chicken broth Low-sodium recommended
  • 1 medium onion, diced Yellow or white onion
  • 3 cloves garlic, minced
  • 1 cup heavy cream Can substitute with half-and-half for lighter sauce
  • 1/4 cup all-purpose flour Or gluten-free flour for gluten-free option
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon thyme Dried or fresh
  • Salt and pepper to taste

Preparation

  • Season the chicken with salt, pepper, and paprika.
  • Heat olive oil in a skillet over medium heat.
  • Add chicken and brown on both sides. Remove and set aside.
  • In the same skillet, add onions and garlic, cooking until softened.
  • Sprinkle flour over the vegetables and stir well, cooking for 1-2 minutes.
  • Gradually add chicken broth and cream, stirring to avoid lumps.
  • Return chicken to the skillet, adding thyme. Cover and simmer on low for about 30 minutes, until the chicken is cooked through and the sauce thickens.

Serving

  • Serve hot, with gravy poured over the chicken.

Notes

Brown the chicken well for extra flavor. Adjust gravy thickness by adding more or less flour. For heat, add red pepper flakes.
