Ingredients
  

For the curry

  • 1/2 cup Oil
  • 1 kg Chicken (curry cut)
  • 3 Cloves Cloves
  • 2 small Bay leaves
  • 2 pieces Green Cardamom
  • 2 pieces Black Cardamom
  • 1 inch Cinnamon stick
  • 7-8 pieces Black peppercorns
  • 3 small Onions, chopped
  • 1 tbsp Ginger, minced
  • 1 tbsp Garlic paste
  • 1 tbsp Red Chili Powder
  • 1 tsp Chili Flakes
  • 1 tbsp Salt (or to taste)
  • 1 tbsp Coriander powder
  • 1 tsp Cumin powder
  • 1/2 tsp Turmeric powder

Instructions
 

Preparation

  • Heat oil in a pot over medium heat.
  • Add whole spices (cloves, bay leaves, cardamoms, cinnamon, and peppercorns) and sauté for a minute until aromatic.
  • Add chopped onions, ginger, and garlic paste; cook until onions are golden brown.
  • Stir in the chicken pieces and cook until they are browned.
  • Add all the spice powders (red chili, chili flakes, salt, coriander powder, cumin powder, turmeric) and mix well with the chicken.
  • Pour in enough water to cover the chicken and bring to a boil.
  • Reduce the heat and simmer for 20-25 minutes until chicken is cooked through.
  • Adjust seasoning as needed and serve hot with rice or naan.

Notes

Use fresh spices for better flavor. Adjust the spice levels according to your taste. Allow the curry to simmer longer for deeper flavors. For a richer version, consider adding coconut milk or yogurt towards the end of cooking.
