Easy Homemade Salsa

Ingredients
  

Fresh Ingredients

  • 8 cups Chopped tomatoes Remove skin if using thicker-skinned tomatoes.
  • 2.5 cups Chopped onions
  • 1.5 cups Chopped green peppers
  • 0.5 cups Seeded and diced jalapenos Adjust amount for desired heat.
  • 6 cloves Garlic, peeled and minced

Seasonings

  • 1 tsp Cumin
  • 2 tsp Black pepper
  • 0.125 cups Canning salt
  • 0.25 cups Sugar Balance the acidity of tomatoes.

Liquids

  • 0.333 cups Vinegar Enhances flavor.
  • 1 15oz can Tomato sauce
  • 1 12oz can Tomato paste

Garnish

  • 1 bunch Fresh cilantro Chopped, for garnish.

Instructions
 

Preparation

  • Wash and dice 8 cups of tomatoes.
  • Chop 2½ cups of onions and 1½ cups of green peppers.
  • Chop ½ cup of jalapenos and mince 6 cloves of garlic.

Cooking

  • Combine all the chopped ingredients in a large stockpot or turkey roaster.
  • Add 1 teaspoon of cumin, 2 teaspoons of black pepper, 1/8 cup of canning salt, and 1/3 cup of vinegar into the pot.
  • Mix in 1 (15oz) can of tomato sauce and 1 (12oz) can of tomato paste.
  • Stir all the ingredients together and bring to a boil. Let it boil for 20 minutes.

Canning

  • Seal the salsa in jars and process them in a hot water bath for 20 minutes.
  • Remove the jars from the hot water bath and place them on a dishcloth to cool. Ensure each lid has sealed before storing.

Notes

For best flavor, use fresh ingredients. Adjust the heat by modifying the amount of jalapenos. Taste the salsa before sealing to adjust salt or sugar as needed.
