Fruits

  • 2 cups sliced peaches (1 – 16 ounce can or a quart of home canned peaches) Can use fresh, frozen, or canned peaches

For the Batter

  • 1 1/4 cups granulated sugar Divided use
  • 1 tablespoon cornstarch Optional
  • 1 stick butter 1/4 pound, for melting in the dish
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 3/4 cup milk
  • 1/2 teaspoon vanilla

Preparation

  • In a bowl, mix the peaches with 1/4 cup sugar and 1 tablespoon cornstarch (if using). Drain the peaches and toss them with the sugar mixture.
  • Preheat your oven to 350°F (176°C). Place the stick of butter at the bottom of an 8×8 inch glass baking dish or a 2-quart casserole dish.
  • Put the dish in the oven to melt the butter. Remove it once the butter is melted.
  • In a medium bowl, combine 1 cup sugar, flour, baking powder, salt, milk, and vanilla to create a batter.

Baking

  • Pour the batter over the melted butter. Do not stir it.
  • Gently place the peaches on top of the batter, along with the sugary juice.
  • Bake the peach cobbler for one hour, or until the crust is golden brown.
  • If you use a metal pan, the cobbler may be ready in 30-40 minutes, so watch for browning and bubbling.

Notes

Serve warm, optionally with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage. Ensure butter is fully melted before adding the batter for a crispy edge.
