Preparation

  • In a slow cooker, combine the chicken broth, minced garlic, Parmesan cheese, Italian herbs, salt, and pepper.
  • Place the chicken breasts in the slow cooker and spoon the sauce over them.
  • Add the diced potatoes around the chicken.

Cooking

  • Cover and cook on low for 4-6 hours or until the chicken is tender and cooked through.
  • Garnish with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For extra flavor, add fresh herbs like thyme or rosemary. If you prefer a thicker sauce, stir in a tablespoon of cornstarch mixed with water before serving. Feel free to swap out the potatoes for other vegetables like carrots or green beans.
