Ingredients
  

Tofu Preparation

  • 1 pack extra-firm tofu (12-14oz)
  • 2 tbsp avocado oil (can sub vegetable oil)
  • 2 tbsp cornstarch

Sauce Ingredients

  • 3 tbsp Gochujang
  • 1 tbsp soy sauce (can sub tamari)
  • 1 tbsp brown sugar (or honey)
  • 2 tsp rice vinegar

Flavoring Ingredients

  • 1 tbsp minced ginger
  • 2 cloves garlic, minced
  • 2 pieces scallions, sliced (optional)

Instructions
 

Preparation

  • Preheat the oven to 425°F and line a baking pan with parchment paper.
  • Press as much liquid out of the tofu as possible with a clean kitchen towel or tofu press.
  • Rip or cut the tofu into nuggets or cubes. Toss the tofu with 1 tbsp of avocado oil and cornstarch until well coated.

Baking

  • Spread the tofu onto the baking sheet and bake for 20-25 minutes until crispy.

Sauce Preparation

  • While the tofu is baking, mix the Gochujang sauce ingredients together in a bowl and set aside.

Final Cooking

  • Heat the remaining tbsp of avocado oil in a large pan over medium-high heat. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  • Add the Gochujang sauce and crispy tofu to the skillet. Mix until the tofu is evenly coated with the sauce.
  • Optionally, top with sliced scallions and serve hot.

Notes

For crispier tofu, ensure maximum moisture is removed. Adjust Gochujang for a milder flavor if desired. Add more vegetables for additional nutrition.
