Homemade Peach Cobbler

Ingredients
  

For the peach filling

  • 5 cups fresh peaches, peeled and sliced Use ripe peaches for the best flavor.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon Add more if you like a stronger spice flavor.
  • 1/4 teaspoon ground nutmeg Add more if you like a stronger spice flavor.
  • 2 teaspoons lemon juice
  • 1 tablespoon cornstarch

For the batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup milk Almond milk can be substituted.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the sliced peaches, 1 cup of granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir well and set aside.
  • In another bowl, mix the flour, remaining 1 cup of granulated sugar, baking powder, and salt.

Baking

  • Pour the melted butter into a 9×13 inch baking dish.
  • Add the vanilla extract and milk to the flour mixture and stir until smooth.
  • Pour the batter over the melted butter in the baking dish without stirring.
  • Spoon the peach mixture evenly over the batter. Do not stir.
  • Bake in the preheated oven for 40-45 minutes or until the top is golden brown and the edges are bubbling.
  • Allow the cobbler to cool for at least 10 minutes before serving.

Notes

Serve warm with a scoop of vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the cobbler in the oven at 350°F (175°C) for about 15 minutes.
