  • 1 small Onion Finely diced.
  • 2 cloves Garlic Mince for flavor.
  • 1/4 cup Cilantro Chopped.
  • 2 tablespoons Lime juice Freshly squeezed.
  • 1 teaspoon Salt To taste.
  • 1 small Jalapeño Optional, adjust based on spice preference.

Preparation

  • Dice the fresh tomatoes, onion, and jalapeño (if using).
  • Mince the garlic and chop the cilantro.
  • In a bowl, combine tomatoes, onion, garlic, jalapeño, and cilantro.
  • Add lime juice and salt to taste, mixing well.
  • Pour the salsa into sterilized jars.
  • Process jars in a water bath canner for 15-20 minutes.
  • Allow to cool and store for later use.

Notes

Store in sterilized jars in the refrigerator for up to one week. If processed in a water bath, it can last for several months. Always check for signs of spoilage before using. Let the salsa sit for a little while before serving to allow flavors to meld.
