Ingredients
  

For the salmon

  • 2 pieces salmon fillets Fresh or thawed from frozen
  • 2 tablespoons honey Adjust sweetness as desired
  • 1 tablespoon soy sauce Use tamari for a gluten-free option
  • 1 tablespoon olive oil For cooking
  • Salt and pepper To taste

For the sides

  • 1 cup rice White or brown rice can be used
  • 2 cups broccoli, cut into florets Fresh or frozen
  • 2 cups water For cooking rice

Instructions
 

Cooking the rice

  • In a medium pot, bring 2 cups of water to a boil.
  • Add the rice and a pinch of salt. Reduce heat to low, cover, and let it simmer for about 15-20 minutes, or until the water is absorbed and rice is tender.

Preparing the broccoli

  • In a separate pot, bring water to a boil and add the broccoli florets.
  • Cook for about 4-5 minutes until bright green but still crisp. Drain and set aside.

Cooking the salmon

  • Heat olive oil in a pan over medium heat.
  • Season the salmon fillets with salt and pepper.
  • In a small bowl, mix together honey and soy sauce. Pour this mixture over the salmon fillets in the pan.
  • Cook the salmon for about 4-5 minutes on each side, or until it is cooked through and has a nice glaze.

Serving the dish

  • Serve the salmon on a plate with rice and broccoli on the side.
  • Drizzle any leftover honey glaze over the top for extra flavor.

Notes

This dish is best served warm. For extra flavor, add garlic or ginger to the glaze mixture. Feel free to change the veggies, using snap peas, asparagus, or spinach instead of broccoli. Store leftovers in an airtight container in the refrigerator for up to 2 days.
