Ingredients
  

Main ingredients

  • 3 pieces ripe bananas Use very ripe bananas for the sweetest flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda Ensure your baking soda is fresh for the best rise.
  • Pinch n/a salt
  • 3/4 cup sugar You can reduce the sugar by 1/4 cup for less sweetness.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.

For the glaze

  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup Can substitute with honey for a different flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir the melted butter into the mashed bananas.
  • Mix in the baking soda and salt.
  • Stir in the sugar, beaten egg, and vanilla extract.
  • Mix in the flour until just incorporated.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake for 60-65 minutes, or until a toothpick stuck into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.

Glazing

  • To make the glaze, mix the powdered sugar and maple syrup together until smooth, then drizzle over the cooled banana bread.

Notes

Serve warm or at room temperature. Great with a spread of butter or alongside a cup of tea or coffee. For added texture and flavor, consider adding walnuts or pecans.
