Instructions
 

Preparation

  • In a large sauté pan over low-medium heat, warm the olive oil.
  • Add the minced garlic and cook for 1-2 minutes, stirring frequently, until fragrant.
  • Stir in the chopped sun-dried tomatoes, oregano, red chili flakes, salt, and black pepper. Cook for 1 minute.
  • Add the drained chickpeas, vegetable broth, tomato paste, vegan cream, and sliced spinach. Stir well.
  • Bring to a gentle simmer over medium heat and cook for about 5 minutes, until warm and the spinach has wilted.
  • Taste and adjust seasonings with more salt, pepper, or red chili flakes as desired.
  • Remove from heat and stir in the fresh basil and optional grated parmesan.

Serving Suggestions

  • Serve immediately with crusty bread for dipping or over cooked rice, pasta, or baked sweet potatoes.

Notes

To store, let cool to room temperature, then transfer to an airtight container and refrigerate for up to 4 days. Reheat on the stove or in the microwave. Adjust spices according to preference and consider adding other vegetables for extra flavor.
