Ingredients
  

Main Ingredients

  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • 3 cups fresh spinach
  • 1.5 cups cherry tomatoes, halved
  • 1 large red bell pepper, diced
  • 1 medium yellow squash, sliced
  • 4 cloves garlic, minced

Seasonings and Oils

  • 3 tablespoons olive oil Divided
  • 1 teaspoon dried oregano Divided
  • 0.5 teaspoon red pepper flakes Optional for spice
  • 1 zest of 1 lemon
  • Salt and black pepper to taste

Preparation

  • Pat the chicken breast pieces dry with paper towels and season generously with salt, black pepper, and half of the dried oregano.

Cooking

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken pieces and sear for 5-6 minutes until golden-brown. Transfer to a plate.
  • In the same skillet, add the remaining olive oil and sauté garlic for 30 seconds. Then, add bell pepper and squash. Cook for 4-5 minutes until softened.
  • Add cherry tomatoes and cook for another 2 minutes. Return the chicken to the pan, add spinach and the remaining seasonings. Toss everything together and cook for 2-3 minutes until the spinach wilts.
  • Remove from heat, finish with fresh lemon zest, adjust seasonings if needed, and serve immediately.

Notes

This stir fry is delicious on its own but can also be served over rice, quinoa, or couscous. A sprinkle of feta cheese adds a Mediterranean touch. For storage, cool to room temperature, then refrigerate in an airtight container for up to 3 days. Reheat in the microwave or on the stove.
