  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice

Preparation

  • In a large bowl, combine chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • If using, sprinkle feta cheese on top.
  • Allow the salad to marinate for about 10 minutes to let the flavors blend.

Notes
