Ingredients
  

For the peach filling

  • 4 cups fresh peaches, sliced
  • 1 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the batter

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 cup sugar (for topping)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix sliced peaches with 1 cup of sugar, lemon juice, and vanilla extract. Pour the peach mixture into a greased baking dish.
  • In another bowl, combine flour, milk, 1 cup of sugar, baking powder, and salt until smooth.
  • Pour this batter over the peaches in the baking dish.
  • Drizzle the melted butter on top.

Baking

  • Bake for 30-40 minutes or until the topping is golden brown and a toothpick inserted comes out clean.
  • Let cool slightly before serving.

Notes

Peach cobbler can be served warm or at room temperature. It's delightful on its own or served with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers covered for up to three days in the refrigerator or freeze for up to two months.
