  • 1 cup diced fresh pineapple Use ripe pineapple for the best sweetness and flavor.
  • 1 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup finely chopped red onion
  • 1 jalapeno pepper, seeded and minced Adjust the amount of jalapeno to your spice preference.
  • 1 Juice of 1 lime
  • Salt to taste

  • In a medium bowl, combine the pineapple, tomatoes, cilantro, red onion, and jalapeno pepper.
  • Squeeze lime juice over the mixture and season with salt.
  • Toss everything together until well mixed.
  • Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

Pineapple salsa can be served with tortilla chips, grilled chicken, fish, or tacos. To store leftovers, place in an airtight container and refrigerate for up to two days. Stir before serving as some liquid may separate. For variations, try adding diced avocado or mango.
