Ingredients
  

For the base

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 6 cups rice cereal

For the topping

  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Preparation

  • In a saucepan over medium heat, combine the light corn syrup and granulated sugar. Stir until the mixture comes to a boil.
  • Remove from heat and stir in the peanut butter until smooth.
  • In a large bowl, combine the rice cereal and the peanut butter mixture; stir until the cereal is well coated.
  • Press the mixture into a greased 9×13-inch pan.

Topping

  • In a microwave-safe bowl, combine the chocolate chips and butterscotch chips. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth.
  • Spread the melted chocolate mixture over the cereal layer.
  • Allow to cool completely before cutting into squares.

Notes

Make sure to grease your pan well to prevent sticking. Allow the bars to cool completely for easier cutting. For added flavor, consider using dark chocolate chips instead of semi-sweet. Customize your Scotcheroos by adding toppings like sprinkles or nuts before the chocolate layer sets.
