Ingredients
  

For the peach filling

  • 6 cups fresh peaches, peeled and sliced Choose ripe, fresh peaches for the best flavor.
  • 1 cup sugar Adjust the sugar based on the sweetness of the peaches.
  • 2 teaspoons lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon A sprinkle on top adds a nice touch.
  • 1/2 teaspoon salt

For the batter

  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 1 1/2 teaspoons baking powder
  • 1/4 cup butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the sliced peaches, sugar, lemon juice, cornstarch, cinnamon, and salt. Mix well and set aside.
  • In another bowl, whisk together the flour, baking powder, melted butter, milk, and vanilla until smooth.

Cooking

  • Pour the peach mixture into a greased baking dish.
  • Pour the batter over the peaches, using a spatula to spread it evenly.
  • Bake for 40-45 minutes or until the top is golden brown.
  • Allow it to cool slightly before serving.

Notes

Serve warm, scooped into bowls. Delicious on its own or with vanilla ice cream. Store any leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
