Peach Filling

  • 4 cups fresh or canned peaches, sliced Use fresh peaches if in season for the best flavor.
  • 1 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the peaches, sugar, cinnamon, nutmeg, and lemon juice. Spread the mixture into the bottom of a greased baking dish.
  • In another bowl, combine flour, sugar, baking powder, and salt. Stir in the milk and melted butter until just combined.
  • Pour the batter over the peach mixture in the baking dish.

Baking

  • Bake for 45-50 minutes, until the crust is golden brown and a toothpick comes out clean.
  • Let it cool for a few minutes before serving.

Notes

Serve warm with vanilla ice cream or whipped cream for added sweetness. For best flavor, ripe peaches are recommended. Adding a teaspoon of vanilla extract can enhance the flavor, and letting the batter sit for a few minutes before pouring can result in a thicker cobbler.
