Ingredients
  

For the cookie dough

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup strawberries, chopped Use fresh for best flavor

For the cheesecake filling

  • 1 package cream cheese (8 oz), softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together sugar and butter until smooth.
  • Beat in the egg and vanilla extract.
  • In another bowl, mix together flour, baking soda, and salt. Gradually add this to the creamed mixture.
  • Fold in the chopped strawberries.
  • For the cheesecake filling, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  • Scoop cookie dough onto a baking sheet, making an indentation in the center of each.
  • Fill the indentation with a small amount of cheesecake filling.

Baking

  • Bake for 10-12 minutes or until the edges are golden.
  • Let cool before serving.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for longer storage, up to a month. Use fresh strawberries for best flavor and room temperature butter and cream cheese for smoothness. Variations include adding chocolate chips or other fruits.
