  • 1 cup salsa

  • 1 avocado, diced

  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed

  • Place chicken breasts in the slow cooker and cover with salsa.
  • Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
  • While the chicken cooks, prepare rice according to package instructions.
  • Once chicken is done, shred it using two forks and mix it with the salsa.
  • Serve the shredded chicken over a bed of rice, topped with diced avocado, chopped cilantro, shredded cheese, and black beans.
  • Drizzle with cilantro lime vinaigrette before serving.

Notes

For added flavor, marinate the chicken in salsa overnight before cooking. You can use brown rice or quinoa instead of white rice for a healthier option. Adjust the spice level by using mild or spicy salsa, based on your preference. Add other toppings like sour cream, jalapeƱos, or corn for extra taste and texture. To store leftovers, let them cool down before transferring to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 2 months. Thaw overnight in the fridge before reheating.
